Using Chia Seed Flour
Like all flours, Original Chia Seed Flour should always be sifted before use. We recommend using as small a vessel as possible when baking with Chia Seed Flour. Large vessels do not disperse heat as well to the center and can leave it uncooked when the outer edges are finished.

Proper Flour Measuring
Prepare a large bowl and a large sifter
Sift the flour into the large bowl
Scoop the amount needed from the large bowl
Level off with a knife or spatula
Do not pack flour
For best results, use flour measured this way in all recipes with all flours

Texture and Appearance
Chia Seed Flour holds on to moisture and requires a slightly longer baking time than recipes made with all-purpose flour. We recommend increasing bake-time for conversion recipes by about 10% to 20%. If you use a toothpick or a knife to test doneness, the Chia will pull the batter together and away from the tester, leaving it looking dry before it is actually done.

This added moisture protects against over cooking, but can leave the finished product with a slightly soggy texture, although it is cooked through. Using both Original Chia Seeds and Original Chia Seed Flour in a single recipe is not recommended for this reason as well. This moisture also causes the product to stick to cooking vessels more. We recommend both lining and greasing all cooking vessels when possible. Non-stick cooking vessels are best.

Original Chia Seed Flour contains organic brown rice flour. When baked, the rice flour becomes medium to dark brown in color, no matter what the original appearance of the batter may have been.

Storage
We recommend storing Original Chia Seed Flour in the refrigerator to ensure freshness. Once incorporated into cooked products, refrigeration is only necessary for those with major dairy ingredients, such as cheesecakes or cream cheese icing. However, like all baked goods, high room temperature can spoil products if left too long before consumption.

Healthier Options
We highly encourage experimentation with our recipes. While we are making our best efforts to provide tested and approved low-fat, low-carb and vegan recipes, egg, butter and sugar substitutions are recommended for those on restricted diets.

Using Chia Seed
Like the flour, Original Chia Seed Flour holds onto moisture in baked goods. We suggest taking similar precautions with lining and greasing pans. It would be best to increase cook time slightly as well; by about 5%.
